Shredded Brussels Sprout and Cranberry Salad



A tasty and healthy salad with sweet dried cranberries, shredded Brussels sprouts, and a sour honey-lemon dressing. Great as a side dish that is light and cool.

Ingredients:

  • 1 lb Brussels sprouts, shredded
  • 1/2 cup dried cranberries
  • 1/4 cup sliced almonds
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions:

In a large bowl, combine the shredded Brussels sprouts, dried cranberries, sliced almonds, and grated Parmesan cheese

In a separate small bowl, whisk together the olive oil, lemon juice, and honey to make the dressing

Pour the dressing over the salad and toss to coat all the ingredients evenly

Season the salad with salt and pepper to taste

Refrigerate for at least 30 minutes before serving to allow the flavors to meld

Serve chilled and enjoy!
